In recent years, vegetarian or vegan diets have spread on a large scale. By now everyone, whether for ethical reasons, to safeguard their health or just out of curiosity, has tried some vegetable dishes intended for those who follow a certain type of diet.

The shops have also adapted. In fact, today there are real departments dedicated to everything that is veg; however, vegetarian dishes bought at the supermarket are not always really "healthy" and often contain lots of preservatives and chemical agents (not to mention that they are generally very expensive).

So why not prepare vegetarian dishes yourself? Maybe to freeze and use at the right time. Here are the simplest and tastiest recipes to prepare homemade vegetable burger.

Homemade veggie burgers: chickpea burger

Ingredients to prepare homemade chickpea vegetable burgers

  • A box of organic boiled chickpeas.
  • 400 grams of potatoes.
  • A sprig of rosemary.
  • Salt and Pepper To Taste.
  • Extra virgin olive oil.

Vegetable chickpea burgers: method

  • Boil the potatoes in boiling water.
  • When the potatoes are cooked, use a potato masher and place in a large bowl.
  • Meanwhile, blend the chickpeas in a blender and add the previously chopped rosemary.
  • Add the chickpeas to the potatoes and mix until a homogeneous mixture is obtained.
  • Add salt and pepper according to your taste.
  • With the help of a pastry cutter, give shape to homemade vegetable burgers.
  • In a non-stick pan, pour a drizzle of extra virgin olive oil, when the oil is hot, place the burgers on it.
  • Brown for about 10 minutes, taking care to turn the vegetable burgers halfway through cooking.
  • Serve hot or cold accompanied by a fresh side dish (such as salad or boiled green beans).

Lentil vegetable burger

Ingredients for making lentil veggie burgers

  • 250 grams of lentils.
  • 1 carrot.
  • 1 shallot.
  • A bunch of fresh parsley.
  • Extra virgin olive oil as needed
  • Salt and Pepper To Taste.

  • Cut the carrots and put them in a blender.
  • Add the shallot and the bunch of parsley, mix everything until you get a homogeneous, almost creamy mixture.
  • Brown the carrot-parsley-shallot mix in a pan with a drop of extra virgin olive oil.
  • Add the lentils and cover everything with water or vegetable broth.
  • Season with salt and pepper to taste and leave to cook for about half an hour.
  • When the lentils are soft enough, with the help of a blender, blend them coarsely.
  • Allow to cool and with wet hands form burgers (if you have difficulty you can use a pastry ring).
  • Cook in a pan with a drizzle of oil and serve lukewarm homemade veggie burgers, a totally vegetable mix of taste and lightness!

Vegetable burger with zucchini and feta

  • 200 grams of preless cannellini beans.
  • 3 small courgettes.
  • 100 grams of feta cheese,
  • 1 egg.
  • One red onion.
  • Basil to taste
  • Breadcrumbs to taste

Homemade vegetable burger with zucchini and feta: procedure

  • Chop the onion in a blender.
  • In the same blender (also containing the onion still) add the zucchini and egg.
  • Salt and pepper to taste.
  • With your hands, chop the feta cheese and add it to the mixture.
  • Pour the mixture into a bowl and blend the cannellini beans as well.
  • Add the basil and a bite of breadcrumbs (only if the mixture is too liquid).
  • Shape into burgers of the size you prefer.
  • Cook the homemade vegetable burgers with zucchini and feta in a lightly greased pan with a drizzle of oil.
  • Veggie burgers can be served (and they're delicious both hot and room temperature!).

Attention: this latest version of the homemade vegal burgers it is not 100% vegetable. It's a vegetarian recipe and not vegan due to the feta cheese and eggs in the dough. Alternatively, you can replace these two ingredients with a vegan cheese and a teaspoon of corn starch diluted in a cup of water.
