Salad with leaves and linden flowers

THE flowersof Lime, as well as the young and tender leaves, are eaten raw in salads, alone or mixed with other types of salad. Even the adult leaves are edible, they are always used raw but only after removing the harder midrib. Usually, the adult leaves are eaten in mixed salads or to fill sandwiches.

With lime it is possible to prepare an unusual flour for sweet and savory doughs. For the recipe, I refer you to the page dedicated toedible linden.
