Recipes with flowers:tagliatelle with primroses
Ingredients for six people. - Difficulty of Preparation: medium. - Preparation time: 60 minutes
- Two handfuls of primrose flowers
- A handful of primrose leaves
- 3 eggs
- 300 g of white flour
- salt up as required
- A spoonful of extra virgin olive oil
- butter to taste
- 3-4 sage leaves
- Parmigiano Reggiano grated to taste
Finely chop the primrose flowers and leaves.
Prepare the fresh pasta by placing the flour in a heap, break the eggs in the center, add the salt, oil, chopped primroses and knead until you get a smooth and homogeneous dough.
Roll out the dough by pulling a sheet of 2-3 mm thick. If you have a pasta machine at home, use it!
Cut the pasta into strips about 1.5-2 cm wide. Alternatively, use the appropriate shape to make tagliatelle with the pasta machine.
Cook the primroses tagliatelle in plenty of boiling salted water.
Aside, in a saucepan over low heat, prepare the sauce. Melt the butter and add the sage.
When cooked, drain the homemade primrose tagliatelle and season with melted butter and Parmigiano Reggiano.

Ingredients for four people. - Difficulty of preparation: easy. - Preparation time: 40 minutes.
- 500 g of flour
- 20 g of fresh brewer's yeast
- a tablespoon of extra virgin olive oil
- salt up as required
- 300 ml of warm water.
- 500 g of white onions
- a generous handful of rosemary flowers
- salt, just enough
- extra virgin olive oil, just enough
In a large bowl, pour the flour and arrange it in a heap.
Add the salt, oil and yeast dissolved in warm water. Work the dough generously, adding more water if necessary. Let the focaccia rise for 2 hours.
While waiting, finely slice the onions and soak them for an hour. After the wait, dry them well and brown them in a pan with oil.
Divide the dough into two equal parts. Roll out the first part in a greased baking sheet, do the same with the second part of the dough (you will get two focaccia). Season the focaccia with onions and rosemary flowers. Set aside two teaspoons of rosemary flowers for garnish.
Cook at 200 ° C for about 40 minutes and serve decorating them with rosemary flowers.
